    We learned to make juicy, succulent pork dumplings in China at the Waldorf Astoria in Beijing. It was super fun to get my hands dirty with the di sum chefs there and learn some authentic dumpling making techniques.

    Here’s how it’s done:

    Ingredients:

    For filling

    12 ounces napa cabbage leaves, roughly chopped (or regular cabbage)
    1 teaspoon kosher salt (or 1/2 teaspoon table salt)
    1 teaspoon grated fresh ginger (use microplane grater)
    1/4 cup minced Chinese chives or green onions (white and green parts)
    2/3 pound ground pork
    1/8 teaspoon ground white pepper (or freshly ground black pepper)
    1 1/2 tablespoons soy sauce
    1 tablespoon dry sherry
    2 teaspoons sesame oil

    For dumpling dough:

    2 cups all purpose flour
    1 cup boiling water

    Method:

    In a bowl, mix the flour and 1 cup boiling water until a soft dough forms. Knead the dough on a lightly flour surface about 5 minutes, or until smooth. This will become your dumpling wrapper.

    Divide the dough in half. Shape each half into a roll 12 inches long and cut each roll into 1/2-inch slices.

    Roll 1 slice of dough into a 3-inch circle and place 1 tablespoon pork mixture in the center of the circle. Lift up the edges of the circle and pinch 5 pleats up to create a pouch to encase the mixture. Pinch the top together. Repeat with the remaining slices of dough and filling.

    Boil the dumplings in seasoned water for 5-7 minutes or until they all float to the top. Remove with a slotted spoon and serve.
