Greetings! Its too darn hot to cook! I think it may be like this all across the country this summer, so a cool meal is in order. Tonight I am making my Tuna and Macaroni salad which is a meal in itself. You can serve this on a bed of lettuce with cucumber tomato and whatever other crunchy veggies you like.
I love to make a large batch of this salad because the leftovers will get some hard cooked chopped eggs, a can of sliced and drained black olives and a handful of chopped green onions. That way you can make the leftovers like a whole new salad.
This recipe makes between 12 and 16 servings. This is a wholesome and hearty cool meal that you don’t need to heat up your kitchen to prepare. The only cooking involved here is boiling the pasta.
You can add imitation crab meat and/or baby shrimp to this or you can sub out steamed and flaked salmon for the tuna. You can even use a steamed and flaked tuna steak in here instead of the canned tuna. I used canned because that is what I had on hand.
